Ingredients
1 pizza crust
1 cup hummus (you can use this recipe or buy it ready made OR use your own recipe)
1/2 grated colby jack cheese
2 cups romaine lettuce
1/2 cup sliced black olives
1/2 cup crumbled feta cheese
3 tablespoons red wine vinegar
2 tablespoons olive oil
1 teaspoon sugar
The Process
Bake crust according to directions. While still warm, spread hummus over crust and top with grated cheese. Cheese should melt immediately. Mix together red wine vinegar, olive oil and sugar. Lightly dressed washed and chopped lettuce. Sprinkle over pizza. Top with sliced olives and crumbled feta cheese.

Ingredients
4 corn tortillas
1/2 olive oil
1 cup chopped onions
1 cup zucchini
1 cup carrots
1/2 cup chopped tomatoes
1/2 cup green bell pepper (seeded)
3 1/2 cup vegetable broth
1/2 cup tomato sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
The Process
Cut tortillas into strips. Heat oil in skillet. Fry strips over medium heat until crisp. Drain on paper towel, set aside.
Place onions, zucchini, carrots, tomatoes, green bell peppers, vegetable brother, tomato sauce, salt and pepper in a pot and bring to a boil. Reduce heat, cover and simmer 15 minutes. Pour soup into servings bowls. Lay tortillas strips on top of each serving and sprinkle with cheese. Serve hot.
